I recommend getting Ableton, or Fruity Loops. Ableton is more confusing, but producing music on it is way more satisfying.

There's also Finale, though that one uses a sheet music format (from what I remember), so unless you know your way around that, it might prove difficult at first to use it.

I actually know sheet music really well, the variety of instruments is more important to me

If you care about instrument variety you're gonna love Ableton. It comes packed with high quality libs and has great starter sounds. FL lacks quality beginner sounds. You can always get new libraries from the internet.

i use fl studio but there are so many good DAW like cubase,reaper,ableton,nuendo and pro tool there are just too much to list

FL Studio's starter sounds suck so you'll have to find some way to get new ones, but it is relatively easy to use and it's demo version is full-featured (only thing it doesn't let you do is reopen what you've saved).
Or you could go with something like ACID (made by Sony Creative Software), and that's much easier for beginners.

Well, if you have a mac (Which I doubt you do) then you should get Logic Pro. It's what I use, and it's great.

I use E-Jay I don't know, its pretty good, fruity loops is good too but I don't use much music making cpu programs except the 2 I named and audacity, In my experience from the Dance series of E-jay Dance 5 is my personal favorite, I like it better than the newer ones. Hip Hop and Dance and Special are the only ones I have tried though.
