It's so utterly fast paced and there was too much stuff occurring at once, I couldn't stand it therefore I got rid of it. Donkey Kong Tropical Freeze is almost the same way; it makes my eyes burn but not much else. I am worried about Mario Kart 8, since the graphics are still improving in gaming, and eventually it's going to get so HD no one can stand it anymore.
I actually have the same problem with Tropical Freeze and I ended up only playing it with the Wii U gamepad because it was just impossible on an HD TV. I reckon that fast pace in Double Dash kinda hurted my eyes back then too, but it was quite lightly and nothing important like you.

To be more on-topic, my favorite Mario Kart is MKW. I still play it a bit and it's just the one that I enjoy the most. I never bothered much being a good or competitive player although that certainly doesn't entirely explain why some like or dislike it. That aside, blue shells are indeed frustrating and more common in this game than in the others. (lightinings too)
For the rest I can't make a proper list, I tend to forgot how I felt back then as it's been a while since I played them. What I could tell though is that I never particulary liked MK7. Removing items felt unneccesary to me, as well as creating a less original one (lucky 7) instead. While I think customizations is a good addition it just wasn't enough to me, and the roster was a major disappointment.
As for MKDS, I liked it at first. The mission mode should've definitely brought back. What totally ruined my experience was snaking. It was just impossible to play online decently and playing alone got quite boring after a while.

I'm still quite excited for MK8. The gravity gimmick doesn't impresse me much so far, but it might prove itself to be good for creating less linear races or at least more shortcuts. I'm not fond of keeping MK7's formula (it seem like that to me, rather than MKW) but I think it'll be better than MK7 nontheless. I'm still disappointed by the roster, or well to be more precise for pretty much only one or two characters. I don't like how they keep adding similar characters while not using original ones like King Boo who appeared twice, or even Petey Piranha. At least they brought back Waluigi and let's hope they don't put Queen Bee in again.

I wanna play as Nintendog and Steel Diver Pilot.
Those are the two best possible picks for character additions so I hope you're listening, Nintendo.

A lot of people think Captain Falcon should be playable in Mario Kart 8 because he hasn't appeared outside of Smash Bros. in over 10 years and also because of the game's anti-gravity mechanics. It seems like a pretty good idea to me, honestly.
