Sonic 3 Complete is a very interesting hack of Sonic 3 and the definitive way to play the game, imo.
It's essentially the same as the base game, but it offers a variety of improvements and customizable options.

Some Super Mario World ROM hacks seem to be almost like you're playing something completely different, in terms of mechanics and all. A classic example is the Call of Cthulhu ROM hack. I've always wondered WHY there are so many ROM hacks for SMW and not something like say, SMB3.

SMW became the more popular option which means that it has become more convenient as more user-friendly get developed as a result. This in turn would attract people who are getting into hacking to choose SMW, because the existing community has ensured that hacking SMW is easier than hacking other games.

Newer Super Mario Bros. Wii. The boss fights are awesome (except for the Koopalings, because they are too generic), bonus Worlds, good music and amazing level design.

A ROM hack called Super Mario Bros. 3 Mix. It's an amazing ROM hack, with so much from other games, even gravity mechanics and Star Coins.

Paper Mario 64 Pro Mode* is the most interesting Nintendo 64 ROM Hack I ever seen! Must I say more? *I find this hack interesting because the creator of this hack modify some of the bosses and in-game events. Plus, these extra features:
A "Rematch" boss gauntlet
Beta badges that weren't in the final game
2x pain for you!
Some custom/beta enemies like for example, a spiked paragoomba
The "Luigi's challenge" were you can't level up, and start with 64 Badge points
I was thinking of giving this ROM hack a go whenever I get the chance by downloading the project 64 emulator. ^^"

Better known as 7 Grand Dad. It spawned a meme within the Vinesauce community, and eventually spread out further.
Though it's more of a bootleg than a ROM hack...

Another ROM hack I really enjoyed was Super Mario Logic. It was a really creative puzzle hack, and I suggest checking it out.

I recently noticed there's a expansion hack of Super Mario Bros. 1 out there called: Super Mario Bros.1/3! And guess what, it HAS 2 player co-op mode*! Wow! So here's a YouTube video:
*The same 2 player co-op as in Chip n' Dale on the NES

Pretty much anything by Kaze Emanuar (yes even Releasio), or Mario's Mystery Meat.
The Sonic ROM hacking community is super impressive, as well. I specially recommend Knuckles' Emerald Hunt. It's Sonic 2 but with the emerald hunt mechanic from the Adventure games.

Super Mario 3mix is my favorite. Mostly because SMB3 is my favorite videogame
Gonna come in and put a few hacks I like on here:
-Rockman 4 Minus Infinity - Pretty impressive hack of Mega Man 4 that adds in a lot of new enemies and gimmicks, as well as difficult stage design, secrets you can find, and some pretty overpowered weapons that are fun to use.
-Super Mario Land 2 Deluxe - Simply put, Super Mario Land 2 with color. You also get the ability to play as Luigi cause why not.
-Super Metroid Project Base - A fun hack that changes up Samus's moveset to be faster and give her more options, while also modifying Zebes to connect rooms, make them look nicer, and add new paths to take, while generally not changing the layout of the planet too much.
-Also, someone modded the Mega Man Legacy Collection version of Mega Man 2 to replace Mega Man with Bass, complete with his moveset from Mega Man 10. It's pretty neat.

*Afaik, I think the original Super Money Ball 1 & 2, Super MarioSunshine, and the best GC/6th console gen game ever, Paper Mario: The Thousand-Year Door had ROM hacks... Might be wrong
