Your inspiration for a level usually already indicates how you want it to look and feel like. If you have no inspiration listen to some music. Also don't forget there are a lot of custom graphics which let you realise styles and scenery not possible with vanilla assets.

My suggestion: if you're having trouble thinking of something to use, and cannot come up with one on your own, go with SMB3. It's probably the most beloved style to use within the SMBX community.

However, if you're having this much trouble deciding a style, I would recommend playing through some episodes till you find the style that you like.

To answer the question of the original post though, you should decide that on your own. I would rather play SMB3 and SMW personally, but Doki-Doki Panic and The original two Super Mario Brothers are also nice.
