Episodes Where Peach is Playable

Well they could've have given her the properties of the chopper suit from smbwii and give her back the ability to charge your jumps by crouching and be able to save it (if you have the leaf). Did they not implement that cause it was too unbalanced or was it a code nightmare?

I'm pretty sure Peach was coed basing her abilities on those she had in SMB2, that's why there aren't the abilities you mentioned.

Except the crouching to charge jump was one of her abilities in smb2 which wasn't implemented.

That was everyone's ability in SMB2, not just Peach's, so that would have to be applied to at least Toad as well.

Super Talking Time Bros 2 is nice collaboration episode.
Super Princess Dreamland by nin8halos has Peach as starring character.
Peach is also playable in my episode SKL - Mario Classic Adventure, though I can't recomend it because hard-to-get some bonuses for her.

"Sarasaland Adventure" by Otabo: Mario and Peach going together (even final battle!), therefore I like this episode!
(by anyway "Damsel in distress"-like stories are annoying for me, because there is too much them... Where imagination of screenwriters?)
